So the health kick continues and so far I have lost 12kg and never felt more well or energetic in my life. One thing I have been missing is baking because you know bakers gonna bake… so I was excited when I found this low fat blueberry muffin recipe and discovered that it was delicious. Check it out!
Low fat blueberry muffins
Adapted from BBC Good Food
225g self raising flour
115g wholewheat flour
2 teaspoons baking powder
zest of one lemon
85g caster sugar
50g light muscovado (or light brown) sugar
1 small overripe banana, mashed
2 eggs
5 tablespoons vegetable oil of your choice
300ml buttermilk
225g fresh or frozen blueberries
Preheat your oven to 200 C (180 C for a fan oven) and lightly grease a 12 hole muffin tin.
In a large bowl mix together the flours, baking powder, lemon juice and sugars.
In a different bowl beat together the eggs and then add the banana, oil and buttermilk and mix well. Using a metal spoon stir the egg mixture into the flour mixture until just combined. Do not over mix.
Add the blueberries and fold in.
Spoon the batter into the muffin tins until 3/4 full. You might need to do more than one round. I bizarrely got 17 muffins out of this.
Bake for 20 – 25 minutes.
Makes 12 – 17 – 155 calories per muffin for 17
